Shake Up Your Vegetarian Menu Plans With Some Help From Cork’s Restaurants

Whether it's for the health benefits or simply for a wider choice of meal ideas, it seems that more and more of us are deciding to have meat-free days, or go all the way and make a vegetarian or vegan life choice. Leaving out meat can require some re-thinking when it comes to meal planning, especially if you're used to starting with which meat you'll have and working the rest out from there. That's where Cork's restaurants can help – there are many great vegetarian dishes available, whether they're the main event or just the side dish. Take some inspiration from our selection of tasty veggie dishes below.

1. Moroccan Chickpea and Spinach stew

The Moroccan Chickpea and Spinach Stew at Cafe Gusto is a prime example of just how interesting and enticing vegan cooking can be. You don't need meat in a stew to make it tasty – you just need to leave the cooking of the stew to the experts! Packed with flavour and served with Italian brown rice and soya yoghurt, this warming stew is perfect on a cold winter's day.

This is just one of the veggie options at Café Gusto, where all the dishes are internationally-inspired, but cooked with fresh, local ingredients.

2. Tauhu Sumbat

Perhaps you'd like a meaty main, but want a couple of veggie starters first. At the Malay Kitchen in Cork, there's a choice of different veggie appetizers, but our favourite is the Tauhu Sumbat. This is a dish of fried tofu that's topped with Asian vegetables. Alongside, there's a spicy yet sweet peanut sauce to dip everything in.

The Malay Kitchen also offers tofu mains such as Rendang Tofu, cooked in coconut milk and lemongrass, if you want to make the whole meal a vegetarian one.

3. Rainbow Bowl

143  is a vegan cafe, so there's no need to check what's vegan and what's not on this menu! For a crunchy and healthy lunch, try the Rainbow Bowl – which features marinated tofu, avocado, pepper, carrot and salad. It comes with a tahini dressing and toasted sesame seeds. As an extra dietary bonus, this dish is also gluten-free.

Pair your bowl with one of their cold-pressed and made to order juices like the Lime Yours and you're sure to have all your five-a-day requirements covered in one sitting!

4. Aloo Tama Bodi

For a curry with a difference, why not try one of several different vegetarian dishes from Thali? Thali is a restaurant that specialises in bringing authentic Nepalese cooking to the people of Cork. Our pick from the vegetarian dishes is Aloo Tama Bodi, a Nepalese classic. Its distinctive flavour comes from the bamboo shoots it's made with, along with potatoes and black beans. This dish is also suitable for vegans.

It comes with rice or naan bread, but if you may want to add another veggie side like Chana Masala – chickpeas cooked in a mildly spicy sauce.
